Parmigiano Reggiano PDO

The Parmigiano Reggiano is unique. An extraordinary dairy product made today as thousand years ago, according to the traditional artisanal method. The secret of the unmistakable flavor of the “king of cheese” lies precisely in the respect for tradition and the bond with its area of origin.

The whole production process, from milking to cheese making, from seasoning to packaging, must exclusively take place in the provinces of Parma, Reggio Emilia, Modena, and parts of Bologna and Mantua, between the Reno River and the Po river.

The Parmigiano Reggiano cannot be produced anywhere else. Only here, only from raw milk produced in this area, milked from the cattle fed on locally grown forage. That’s what gives the parmigiano Reggiano its unique taste and authentic flavor.

Parmigiano Reggiano is a product with the Protected Designation of Origin (PDO). Each wheel is carefully checked and only those that meet the quality requirements established by the Production Regulation obtain the DOP Parmigiano Reggiano mark.

The seasonings

After the processing of cheese making, the wheels of Parmigiano Reggiano are placed on wooden tables and left there to stand. That’s what gives the Parmigiano Reggiano its unique flavor: the seasoning. At least 12 months, each seasoning gives ​​to wheels a different taste, suitable for different uses and dishes.

12 months

The 12-19 months has a harmonious and delicate flavour with scents of milk, yoghurt and butter. The lactic base is characterised by vegetable notes such as grass, boiled vegetables and sometimes fruit and flowers.

24 months

Over 24 months expresses a perfectly balanced richness of aromas and flavours on the nose and palate. Fresh fruit, such as banana, pineapple and citrus fruits appear along with hints of nuts and spices.

36 months

Over 36 months prevailing aroma is that of chestnut and meat stock, slightly spicy and astringent; this cheese features a perfect balance among the five key flavours.

Over 48 months

The Extra Strong aromatic analysis highlights typical leather, dried mushroom and smoky notes. The cheese has a special structure: dry, very crumbly and soluble.

over 60 months

Parmigiano Reggiano 60 months has acquired a very marked and grainy friability, while the taste is even more intense, but never spicy.
Its nuances are even more complex reminiscent of smoky, spice and citrus hints.
